Rebel
Rebel is a trendy wine bar in Brussels-Ixelles. Their unique residency concept always revolves around guest chefs—invited for both short and longer periods. Each chef brings their own style and vision to the restaurant, while Rebel complements it with a selection of creative wines. The guest chefs serve small sharing plates, making every visit a new experience. I visited when guest chef Dan Chambers was in charge—and it was absolutely delicious. His dishes are straightforward, focusing on seasonal produce and bold, punchy flavors. The interior of Rebel is colorful, funky, and stylish, with a casual, laid-back vibe I really love. On sunny days, their terrace is definitely worth a spot. PS: they’re open for apero and dinner. Prices for small plates to share are between €9 and €17. Prices for dessert are around €10. Prices for wines by the glass are between €7 and €9. • Ajo blanco (courgette, pickled cherries, pistachio)• Fried gnudi (lemon, mint, saffron)• Torched mackerel (yellow pepper, piquillo, coriander)• “Grain” sourdough bread (tasty butter)• Orange wine (Amos Baneres)• White chocolate (smoked yogurt, strawberries, almonds)
